Porridge Pancakes

Ingredients

  • 1 egg
  • 75ml milk of your choice
  • 150g leftover cold porridge
  • 50g self-raising flour ½ tsp baking powder
  • 160g fruit of your choice, roughly chopped
  • 100g yoghurt

Method

  1. Tip the porridge, egg and milk into a bowl and beat together.

  2. Stir in the flour and baking powder and mix until smooth.

  3. Heat a frying pan until medium hot. Add a little oil and spoonfuls of the batter. Cook for 60-90 seconds until bubbles appear on the surface.

  4. Flip over and cook for another 30 seconds until cooked through and golden.

  5. Repeat with the remaining batter.

  6. Divide between serving plates and top with fruit of your choice, and a dollop of yoghurt.
