Filo Tart

Ingredients

  • 2 tbsp olive oil
  • 8 tsp sesame seeds
  • Sea salt and freshly ground black pepper
  • 4 sheets filo pastry, halved
  • 160g feta, crumbled
  • 2 spring onions, finely sliced
  • 120g Jack’s grated mozzarella
  • 8 cherry tomatoes, halved
  • 4 eggs
  • 2 tbsp flat leaf parsley, roughly chopped
  • 4 tsp chilli sauce

Method

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Lightly oil a baking sheet.
  2. Lay half the filo onto the tray and brush with the oil.
  3. Season with salt, pepper and sesame seeds.
  4. Top with the remaining filo and repeat.
  5. Scatter the crumbled feta and mozzarella over the top.
  6. Scrunch up the sides of the filo.
  7. Add the spring onions and tomatoes into the centre.
  8. Crack an egg onto each one.
  9. Place in the oven to bake for 15 minutes until golden brown and the egg just cooked.
  10. Remove and divide between serving plates.
  11. Serve topped with black pepper, chilli sauce, parsley and last of the sesame seeds.
