Side Dishes Starters/Snacks Lunch/Dinner Egg, Tomato and Feta Filo Tart

Ingredients
- 2 tbsp olive oil
- 8 tsp sesame seeds
- Sea salt and freshly ground black pepper
- 4 sheets filo pastry, halved
- 160g feta, crumbled
- 2 spring onions, finely sliced
- 120g Jack’s grated mozzarella
- 8 cherry tomatoes, halved
- 4 eggs
- 2 tbsp flat leaf parsley, roughly chopped
- 4 tsp chilli sauce
Method
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Lightly oil a baking sheet.
- Lay half the filo onto the tray and brush with the oil.
- Season with salt, pepper and sesame seeds.
- Top with the remaining filo and repeat.
- Scatter the crumbled feta and mozzarella over the top.
- Scrunch up the sides of the filo.
- Add the spring onions and tomatoes into the centre.
- Crack an egg onto each one.
- Place in the oven to bake for 15 minutes until golden brown and the egg just cooked.
- Remove and divide between serving plates.
- Serve topped with black pepper, chilli sauce, parsley and last of the sesame seeds.
