Easy Lunch Boxes

Ingredients

  • 5 tbsp olive oil
  • 200g halloumi, cut into small cubes
  • 1 tsp smoked paprika
  • Sea salt and freshly ground black pepper
  • 1 can chickpeas, drained
  • 2 heads little gem lettuce, shredded
  • 1 punnet cherry tomatoes, quartered
  • 2/3 cucumber, roughly chopped
  • 2 peppers, seeded and roughly chopped
  • ½ bunch spring onions, finely sliced
  • 1 bunch flat leaf parsley, roughly chopped
  • ½ tsp chilli flakes
  • 1 lemon, zested and juiced
  • 5 tsp honey 

Method

  1. Heat a frying pan until hot, add 2 tbsp olive oil and the halloumi and paprika.
  2. Fry for 2 minutes, then add the chickpeas.
  3. Season with salt and black pepper then fry for 3-4 minutes until just golden and hot through.
  4. Divide the lettuce, cherry tomatoes, cucumber, peppers, spring onions and parsley between 5 lunch boxes.
  5. Top with the halloumi and chickpeas.
  6. Sason with salt and black pepper.
  7. Add the chilli flakes, lemon zest and juice, honey and oil.
  8. Cover with a lid and refrigerate until needed.
  9. Shake to combine and serve.
