Dirty Potato Salad

Ingredients

  • 750g frozen Jack’s roast potatoes
  • 2 tsp oregano
  • 2 tsp smoked paprika
  • 2 tsp onion granules
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 1 pot sour cream (200g)
  • ½ pack chives, finely chopped

Method

  1. Toss the potatoes with the oregano, paprika, onion granules, oil, salt and pepper.
  2. Roast in an air fryer at 200°C for 30 minutes until crispy, tossing occasionally.
  3. Tip into a bowl and toss with 2/3 of the sour cream and chives. Season with black pepper.
  4. Serve and top with remaining sour cream and chives.
