Pickle Crisps

Ingredients

  • 500g potatoes, scrubbed and thinly sliced
  • 150ml gherkin pickling juice
  • 2 tsp onion granules
  • 1 tsp smoked paprika
  • ½ tsp sea salt
  • Freshly ground black pepper
  • 2 tbsp olive oil
  • 1 pot Jack’s cheese and chive dip

Method

  1. Tip the potatoes into bowl with pickling juice.
  2. Stir well and leave for 30-60 minutes to marinate. 
  3. Lift potatoes out of marinade and pat totally dry.
  4. Toss with onion granules, smoked paprika, salt and pepper.
  5. Drizzle with oil and toss again until coated
  6. Cook in air fryer at 190°C for 20-25 minutes, stirring occasionally until crispy. (in batches if necessary
  7. Serve with cheese and chive dip.
