Side Dishes Starters/Snacks Lunch/Dinner Crispy Rice Veggie Salad

Ingredients
- 1 tsp vegetable oil
- 250g cold cooked rice
- ½ cucumber, finely diced
- 2 tomatoes, finely diced
- 2 spring onions, finely sliced
- 1 large carrot, scrubbed and grated
- 3 tbsp parsley leaves
- 4 tbsp Newman’s Own Italian salad dressing
Method
- Heat a frying pan until hot. Add the oil and rice and stir fry.
- Cook for 2-3 minutes until the rice is crispy and golden, then stir and repeat until the rice is crispy all the way through.
- Lay the cucumber, tomatoes, spring onion, carrot and parsley onto a plate.
- Drizzle the salad dressing over the top.
- Pile the crispy rice in the centre and serve.
