Crispy Rice Salad

Ingredients

  • 1 tsp vegetable oil
  • 250g cold cooked rice
  • ½ cucumber, finely diced
  • 2 tomatoes, finely diced
  • 2 spring onions, finely sliced
  • 1 large carrot, scrubbed and grated
  • 3 tbsp parsley leaves
  • 4 tbsp Newman’s Own Italian salad dressing

Method

  1. Heat a frying pan until hot. Add the oil and rice and stir fry.
  2. Cook for 2-3 minutes until the rice is crispy and golden, then stir and repeat until the rice is crispy all the way through.
  3. Lay the cucumber, tomatoes, spring onion, carrot and parsley onto a plate.
  4. Drizzle the salad dressing over the top.
  5. Pile the crispy rice in the centre and serve.
