Side Dishes Starters/Snacks Lunch/Dinner Crispy Aubergine Fillet With Houmous Salad

Ingredients
- 2 aubergines
- 40g plain flour
- 2 eggs
- 1 pack Walkers Sensations sweet chilli crisps
- 60ml vegetable oil
- 1 pack Jack’s houmous
- ½ pack Florette Crunchy Side Salad
Method
- Prick the aubergines with a fork.
- Roast in the air fryer on high for 15 minutes until really soft.
- Place in a bowl, cover with cling film and leave to steam for 5-10 minutes.
- Tear the skin from the flesh and discard, keeping the aubergine intact.
- Press the whole aubergines into the flour then egg.
- Crumple the crisps into a small pieces.
- Press into the crisps until totally covered.
- Heat a frying pan until medium hot, add the oil and coated aubergines.
- Fry on each side for 2-3 minutes until crispy and hot through.
- Divide the houmous between 2 plates.
- Top with the salad and crispy aubergine.
