Courgette Muffins

Ingredients

  • 1 large tortilla wrap
  • 60g Philadelphia soft cheese 
  • 1 small courgette, finely sliced
  • 200g roasted red peppers, drained and patted dry
  • 1 small handful rocket
  • 2 eggs
  • 50ml milk
  • Sea salt and freshly ground black pepper

Method

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6 and lightly grease a 6 hole muffin tin.
  2. Spread the wraps with cheese.
  3. Layer on the courgettes, peppers and rocket.
  4. Roll up to a sausage.
  5. Cut each sausage into 6 pinwheels and place into the muffin tin.
  6. Whisk the eggs, milk, salt and black pepper together until smooth.
  7. Divide between the pinwheels.
  8. Bake in the oven for 15-20 minutes until golden and set.
  9. Decant and serve warm or cold.
