Starters/Snacks Lunch/Dinner Courgette Muffin

Ingredients
- 1 large tortilla wrap
- 60g Philadelphia soft cheese
- 1 small courgette, finely sliced
- 200g roasted red peppers, drained and patted dry
- 1 small handful rocket
- 2 eggs
- 50ml milk
- Sea salt and freshly ground black pepper
Method
- Preheat the oven to 200°C, fan 180°C, gas mark 6 and lightly grease a 6 hole muffin tin.
- Spread the wraps with cheese.
- Layer on the courgettes, peppers and rocket.
- Roll up to a sausage.
- Cut each sausage into 6 pinwheels and place into the muffin tin.
- Whisk the eggs, milk, salt and black pepper together until smooth.
- Divide between the pinwheels.
- Bake in the oven for 15-20 minutes until golden and set.
- Decant and serve warm or cold.
