Chopped Chickpea Salad

Ingredients

  • 250g tomatoes, halved
  • ½ cucumber, thickly sliced
  • ½ red onion, thickly sliced
  • 1 x 400g tin chickpeas, drained
  • 2 tbsp mint sauce
  • 3 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 1 green chilli, seeded and sliced
  • ½ small bunch coriander
  • ½ lemon, juiced
  • 1 head little gem lettuce, leaves separated

Method

  1. Lay everything on top of each other onto a chopping board, except the lettuce.
  2. Roughly chop to start with then keep chopping until finely chopped.
  3. Scoop up with the little gem or serve as a salad.
