Starters/Snacks Lunch/Dinner Chopped Chickpea Salad
Serves : 2-4
Preparation Time: Ready in 10 Minutes
Ingredients
- 250g tomatoes, halved
- ½ cucumber, thickly sliced
- ½ red onion, thickly sliced
- 1 x 400g tin chickpeas, drained
- 2 tbsp mint sauce
- 3 tbsp olive oil
- Sea salt and freshly ground black pepper
- 1 green chilli, seeded and sliced
- ½ small bunch coriander
- ½ lemon, juiced
- 1 head little gem lettuce, leaves separated
Method
- Lay everything on top of each other onto a chopping board, except the lettuce.
- Roughly chop to start with then keep chopping until finely chopped.
- Scoop up with the little gem or serve as a salad.
