Desserts Chocolate Orange Cake

Cooking Time: 20-25 minutes, plus cooling
Ingredients
- 1 x chocolate cake mix
- 2 eggs
- 2 tsp ground mixed spice
- 2 tsp ground ginger
- ½ tsp fine sea salt
- 4 satsumas
- 75g flaked almonds
- 100g caster sugar
- 25g butter
- 300ml double cream
- 2 tbsp icing sugar
- 1 tsp vanilla extract
- 50ml orange liqueur, optional
Method

Preheat the oven to 190°C, fan 170°C, gas mark 5. Grease and line the base of a deep sided 20cm round cake tin.

Tip the cake mixture into a bowl, add the ground mixed spice, ground ginger and the zest of 2 satsumas and mix until combined.

Add the eggs and 120ml water and beat for 2 minutes until thick and smooth.

Pour into the cake tin and place in the oven for 20 -25 minutes until risen and springs back when pressed gently.

Remove and allow to cool on a wire rack until cold. Decant from the tin, remove the baking paper and place onto a serving plate.

Meanwhile, peel and segment the last 2 satsumas.

Heat a frying pan until hot. Add the caster sugar and juice from the 2 zested satsumas and heat until bubbling and the sugar is dissolved. Stir in the butter and heat for 1 minute.

Tip the flaked almonds into the pan and stir to combine, then add the segmented satsumas and stir once more.

Remove and allow to cool slightly before pouring over the cooled cake.

Pour the double cream into a bowl and whisk until soft peaks form. Add the icing sugar, vanilla and orange liqueur if using, and whisk to firm peaks. Serve with the cake.
