Lunch/Dinner Chinese Chicken with Tenderstem Broccoli

Ingredients
- 1.3kg medium chicken
- 2 tsp vegetable oil
- 1 tbsp Chinese five spice
- 320g tender stem broccoli
- 4 spring onions, finely sliced
- 1 chilli, finely sliced
- 2 tbsp reduced salt dark soy sauce
- 1 lime, zested and juiced
- 1 tbsp sesame oil, optional

Method

Preheat the oven to 200°C, fan 180°C. gas mark 6.

Place the chicken onto a rack set over a tray and rub with the vegetable oil. Sprinkle the Chinese Five spice over the top and rub into the skin.

Place in the oven to roast for 1 hour. To check that the chicken is cooked, insert a skewer into the fattest part of the thigh and if the juices run clear then the chicken is cooked. If not, return to the oven for another 10 minutes and check again.

When the chicken is ready, remove and set aside for 10 minutes to rest while the broccoli cooks. Turn the oven up to 220°C, fan 200°C, gas mark 8.

Tip the broccoli into a shallow tray and scatter the spring onions, chilli, soy, lime zest and juice and sesame oil (if using) over the top. Place in the oven to roast for 10 minutes until just charred around the edges.

Serve the chicken with the broccoli.
