Chilli Garlic Beans

Ingredients

  • 2 tsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 4 cm piece ginger, peeled and finely grated
  • 1 red chilli, seeded and finely diced
  • 3 tbsp tomato puree
  • 1 x 400g tin Jack’s chopped tomatoes
  • 1 x 400g tin cannellini beans, drained and rinsed
  • 1 x 400g tin Jack’s red kidney beans, drained and rinsed
  • Sea salt and freshly ground black pepper
  • Charred sourdough, to serve

Method

  1. Heat a sauté pan until hot. Add the oil and onion and cook for 3-4 minutes until softened.
  2. Add the garlic, ginger and chilli and cook for 1-2 minutes until fragrant.
  3. Add the tomato puree and cook for 1 minute.
  4. Stir in the tomatoes and beans and season with salt and black pepper
  5. Bring to the boil then reduce the heat and simmer for 5-6 minutes until hot through and reduced slightly.
  6. Serve with charred sourdough.
