JACK's Chicken Salad Recipe

Ingredients

  • 2 tsp vegetable oil
  • 1 Jacks red onion, finely chopped
  • 1 x 250g pack Jacks diced chicken breast, finely chopped into small pieces
  • 19g Jacks mixed chillies, finely diced
  • 1 Jacks limes, zested and juiced
  • 1 tbsp Jacks coriander, roughly chopped
  • Sea salt and freshly ground black pepper
  • 1 x 2 pack Jacks little gem lettuce, leaves separated

Method

  1. Heat a frying pan until hot. Add the vegetable oil and red onion and fry for a couple of minutes until just softened.

  2. Add the chicken and stir fry for 4-5 minutes until just browned and cooked through.

  3. Stir in the chilli, lime zest and juice and coriander and season with salt and black pepper.

  4. Divide the lettuce leaves between serving plates, then top with the chicken mixture and serve straightaway.

Tip

If you fancy a little added flavour, add 1 tbsp ground cumin and 1 tbsp ground coriander to the chicken as you fry it.
