Side Dishes Starters/Snacks Cheese & Rosemary Biscuits
Makes : 20 -25 size dependant

Cooking Time: 12 - 15 minutes
Ingredients
- 175g plain flour
- 1 tsp sea salt
- Freshly ground black pepper
- ¾ tsp smoked paprika
- ½ tsp dried rosemary
- ½ tsp onion powder
- 150g butter, roughly chopped
- 125g grated mature cheddar cheese
- 25g finely grated parmesan
- 1 egg
Method

Preheat the oven to 180°C, fan 160°C, gas mark 4.

Sift the flour into a large bowl. Add the salt, pepper, paprika and rosemary and stir together.

Add the butter and rub together with your fingertips until it forms a breadcrumb like texture.

Stir in the cheeses and rub together until the cheese breaks down, then make a well in the centre of the mixture.

Crack the egg into the well then gradually draw the dry mixture into the egg and continue mixing until it forms a soft dough.

Lightly dush the work surface with flour then roll the dough out to about 5mm thick.

Cut into whatever shapes take your fancy – stars, Christmas trees, oak leaves, etc. If you have cutters you can use them too.

Carefully transfer to a lightly greased baking tray and bake in the oven for 12-15 minutes until golden brown. Leave to cool totally on the tray before transferring to an airtight container until ready to serve.
