Corn on the Cob Recipes - Spiced Corn on the Cob Ingredients

  • 8 corn on the coblets
  • 4 tbsp olive oil
  • ¼ tsp dried chilli flakes
  • 1 tsp ground coriander
  • Sea salt and freshly ground black pepper
  • 2 tbsp finely chopped chives
  • 1 lime, zested and juiced

Method

  1. Place the corn on the cob into a large saucepan then cover with cold water. Place over the heat and bring to the boil. Turn the heat down and simmer for 15-20 minutes until the corn is tender.

  2. Meanwhile, tip all but 1 tsp olive oil into a bowl. Add the chilli flakes, coriander, a pinch of salt and black pepper, chives, lime zest and juice and mix really well.

  3. Drain the corn and drizzle with the last of the olive oil. Heat a griddle pan until hot. Place the corn on the cob onto the hot and char on each side until browned.

  4. Place onto a serving plate and spoon the spiced oil over the top.

  5. Serve straightaway.
