Side Dishes Starters/Snacks Lunch/Dinner Charred Spiced Corn on the Cob

Ingredients
- 8 corn on the coblets
- 4 tbsp olive oil
- ¼ tsp dried chilli flakes
- 1 tsp ground coriander
- Sea salt and freshly ground black pepper
- 2 tbsp finely chopped chives
- 1 lime, zested and juiced

Method

Place the corn on the cob into a large saucepan then cover with cold water. Place over the heat and bring to the boil. Turn the heat down and simmer for 15-20 minutes until the corn is tender.

Meanwhile, tip all but 1 tsp olive oil into a bowl. Add the chilli flakes, coriander, a pinch of salt and black pepper, chives, lime zest and juice and mix really well.

Drain the corn and drizzle with the last of the olive oil. Heat a griddle pan until hot. Place the corn on the cob onto the hot and char on each side until browned.

Place onto a serving plate and spoon the spiced oil over the top.

Serve straightaway.
