Lunch/Dinner Cauliflower Cheese Pasta

Ingredients
- 320g cauliflower, cut into florets
- 300g fusilli pasta
- 25g butter
- 50g plain flour
- 500ml semi skimmed milk
- 200g lighter mature cheddar cheese, grated
- Salt and freshly ground black pepper
- ¼ tsp freshly ground nutmeg
- 40g mild yellow mustard

Method

Preheat the grill to medium hot.

Bring a large pan of salted water to the boil, add the cauliflower and return to the boil. Simmer for 4 minutes then lift out the cauliflower and place in a bowl.

Return the water to the boil, then add the pasta and simmer for 10 minutes until just tender. Drain and tip into the colander.

Put the butter, flour and milk into the saucepan and bring to the boil, whisking constantly until the mixture has thickened.

Add two thirds of the cheese then season with salt, black pepper, nutmeg and the mustard and whisk until smooth.

Tip the cauliflower and pasta into the pan and mix really well until totally coated in the cheese sauce.

Tip into a large ovenproof dish and smooth over then scatter the remaining cheese over the top. Place under the grill for 5 minutes until golden brown and bubbling.

Serve straightaway.
