Ingredients
- 1 pack Organix apple rice cake clouds
- ½ tsp ground cinnamon
- 1 tsp mixed spice
- 75g grated carrot
- 40g cashews
- 60g pitted chopped dates
- 40g sultanas, soaked in 3 tbsp apple juice
- 100g dark chocolate chips, melted
20g white chocolate chips, melted
Method
- Tip the rice cakes, cashews, carrots, dates, sultanas, ground ginger and mixed spice into a food processor and pulse until broken down.
- Blitz until it forms a thick paste that sticks together – if needed, add a little apple juice.
- Form into small balls.
- Dip into the melted chocolate until totally coated, then place onto a parchment lined tray.
- Top with a drizzle of melted white chocolate.
- Pop in the freezer for 10 minutes until set.
- Serve at room temperature.
