Carrot Cake Rice Balls

Ingredients

  • 1 pack Organix apple rice cake clouds
  • ½ tsp ground cinnamon
  • 1 tsp mixed spice
  • 75g grated carrot
  • 40g cashews 
  • 60g pitted chopped dates
  • 40g sultanas, soaked in 3 tbsp apple juice
  • 100g dark chocolate chips, melted 
    20g white chocolate chips, melted

Method

  1. Tip the rice cakes, cashews, carrots, dates, sultanas, ground ginger and mixed spice into a food processor and pulse until broken down.
  2. Blitz until it forms a thick paste that sticks together – if needed, add a little apple juice.
  3. Form into small balls.
  4. Dip into the melted chocolate until totally coated, then place onto a parchment lined tray.
  5. Top with a drizzle of melted white chocolate.
  6. Pop in the freezer for 10 minutes until set.
  7. Serve at room temperature.
