Lunch/Dinner Caribbean BBQ Prawns

Ingredients
Ingredients for Rainbow Rice -
- 125g microwaveable basmati rice
- 125g microwaveable brown basmati rice
- 160g roasted red pepper, finely chopped
- 1 red onion, finely chopped
- 2 tbsp coriander, roughly chopped
- 2 tsp fresh thyme leaves, roughly chopped
- 1 orange, zested and juiced
Ingredients for Prawns -
- 1 tsp vegetable oil
- 1 red onion, sliced
- 150g cooked king prawns
- 2 tbsp Caribbean bbq sauce
- 1 lime, zested and juiced
- 2 tbsp coriander, roughly chopped

Method

Tip the rice into a bowl, then add the all the remaining rice ingredients and stir well.

Cover with a piece of kitchen paper and place in the microwave. Heat on high for 4 minutes until hot through then stir well.

Meanwhile, heat a frying pan until medium hot. Add the oil and the onion and fry for 3 minutes over a medium heat until softened.

Turn the heat up and add the prawns and BBQ sauce and cook for 3-4 minutes until coloured and hot through.

Add the lime zest, juice and coriander and cook for another minute.

Tip the rice into a serving bowl and serve alongside the prawns.
