Ingredients

  • 1 x 320g Jus Roll puff pastry sheet
  • 1 egg, beaten
  • Sea salt and freshly ground black pepper
  • 3 tsp cream cheese
  • 15g smoked salmon
  • 2 chives, finely chopped
  • Freshly ground black pepper
  • 1 lemon, zested
  • 3 tsp Boursin
  • 2 olives, halved
  • 2 leaves flat leaf parsley, finely chopped
  • 3 tsp tomato pesto
  • 3 small mozzarella chunks
  • 3 basil leaves

Method

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Unroll the pastry, place a dessert spoon onto the pastry and cut around it.
  3. Repeat using all the pastry.
  4. Brush with egg and season with salt and black pepper.
  5. Roll up a piece of silver foil into a 4cm tube and lay across a baking tray.
  6. Cover with a piece of parchment paper.
  7. Gently lay the spoons over the centre tube to create a handle.
  8. Bake in the oven for 15 minutes until golden brown and crispy.
  9. Remove and allow to cool.
  10. Top 1/3 with cream cheese, smoked salmon, chives, black pepper and lemon zest.
  11. Top 1/3 with Boursin, olives and parsley.
  12. Top 1/3 with tomato pesto, mozzarella and basil leaves.
  13. Serve straightaway.
