Camembert Chorizo

Ingredients

  • 250g room temperature camembert cheese, rind removed
  • 1 tbsp olive oil
  • 8 slices chorizo, roughly sliced
  • 2 sprigs thyme, leaves picked
  • Freshly ground black pepper
  • crusty bread, to serve

Method

  1. Roughly chop the camembert and tip into a bowl.
  2. Whisk for 5-8 minutes until really soft and fluffy.
  3. Meanwhile, heat a frying pan until hot. Add the oil and chorizo and fry until golden brown and the oils released.
  4. Spread the soft camembert across a serving board or plate.
  5. Top with the crispy chorizo and drizzle chorizo oil over the top.
  6. Scatter with thyme and a sprinkling of black pepper and serve with crusty bread.
