Side Dishes Starters/Snacks Lunch/Dinner Broccoli Fritters

Ingredients
- 200g broccoli, roughly chopped
- 1 bunch spring onions, roughly chopped
- 2cm piece ginger, peeled and roughly chopped
- 2 garlic cloves, roughly chopped
- 1 tin chickpeas, drained
- 1 egg
- 200g feta
- Sea salt and freshly ground black pepper
- 4 tbsp sweet chilli sauce
Method
- Tip the broccoli into a blender and pulse until small pieces.
- Tip into a bowl.
- Tip the chickpeas, spring onion, ginger, chilli, garlic and egg into the blender and blitz until pureed.
- Add to the bowl with the broccoli.
- Season with salt and black pepper and stir to combine.
- Crumble in half the feta and mix together.
- Divide into 6 and form into patties.
- Heat a frying pan until hot, add the oil and patties and fry in batches, until golden brown on each side and hot through.
- Serve with the fritters, remaining feta and chilli sauce.
