Broccoli Fritters

Ingredients

  • 200g broccoli, roughly chopped
  • 1 bunch spring onions, roughly chopped
  • 2cm piece ginger, peeled and roughly chopped
  • 2 garlic cloves, roughly chopped
  • 1 tin chickpeas, drained
  • 1 egg
  • 200g feta
  • Sea salt and freshly ground black pepper
  • 4 tbsp sweet chilli sauce

Method

  1. Tip the broccoli into a blender and pulse until small pieces.
  2. Tip into a bowl.
  3. Tip the chickpeas, spring onion, ginger, chilli, garlic and egg into the blender and blitz until pureed.
  4. Add to the bowl with the broccoli.
  5. Season with salt and black pepper and stir to combine.
  6. Crumble in half the feta and mix together.
  7. Divide into 6 and form into patties.
  8. Heat a frying pan until hot, add the oil and patties and fry in batches, until golden brown on each side and hot through.
  9. Serve with the fritters, remaining feta and chilli sauce.
