Bourbon Brownies

Ingredients

  • 9 bourbon biscuits
  • 150g dark chocolate, roughly chopped
  • 100g butter, roughly chopped
  • 200g soft light brown sugar
  • 3 eggs
  • 1 tbsp vanilla extract
  • 100g self-raising flour
  • 100g dark chocolate chips

Method

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4.
  2. Grease and line the base of a 23cm square tin with baking parchment, then grease the paper too.
  3. Slice the bourbon biscuits in half through the filling.
  4. Lay the slices in 3 rows, filling side up.
  5. Heat the chocolate and butter until melted and smooth.
  6. Add the sugar, eggs, vanilla extract and flour and beat until smooth.
  7. Stir in the chocolate chips.
  8. Gently pour over the bourbon biscuits (take care so they don’t move around)
  9. Smooth the top and place in the oven for 25 minutes until set.
  10. Remove and allow to cool totally before turning out, biscuit side up.
  11. Cut into “biscuits” and serve.
