Desserts Bourbon Brownies

Cooking Time: Ready in 30 Minutes Plus Cooling
Ingredients
- 9 bourbon biscuits
- 150g dark chocolate, roughly chopped
- 100g butter, roughly chopped
- 200g soft light brown sugar
- 3 eggs
- 1 tbsp vanilla extract
- 100g self-raising flour
- 100g dark chocolate chips
Method
- Preheat the oven to 180°C, fan 160°C, gas mark 4.
- Grease and line the base of a 23cm square tin with baking parchment, then grease the paper too.
- Slice the bourbon biscuits in half through the filling.
- Lay the slices in 3 rows, filling side up.
- Heat the chocolate and butter until melted and smooth.
- Add the sugar, eggs, vanilla extract and flour and beat until smooth.
- Stir in the chocolate chips.
- Gently pour over the bourbon biscuits (take care so they don’t move around)
- Smooth the top and place in the oven for 25 minutes until set.
- Remove and allow to cool totally before turning out, biscuit side up.
- Cut into “biscuits” and serve.
