Blueberry Burrata

Ingredients

  • 1 tbsp olive oil
  • 1 small shallot, sliced
  • ¼ tsp crushed chilli flakes
  • 1 pack Jack’s blueberries (150g)
  • 2 tsp maple syrup
  • 1 tbsp balsamic vinegar
  • Sea salt and freshly ground black pepper
  • 2 packs burrata, drained
  • 1 small handful basil leaves
  • ½ lemon, zested
  • 1 tbsp Jack’s roasted salted cashews

Method

  1. Heat a frying pan until hot.
  2. Add the oil, shallot and chilli flakes and cook for 2-3 minutes.
  3. Add the blueberries, maple syrup and balsamic vinegar and cook for 2-3 minutes, stirring occasionally.
  4. Season with salt and black pepper.
  5. Tear the burrata in half onto a plate.
  6. Top with the blueberries, basil, lemon zest and cashews and serve.
