Side Dishes Starters/Snacks Lunch/Dinner Blueberry Burrata
Serves : 2-4
Preparation Time: Ready in 15 Minutes

Ingredients
- 1 tbsp olive oil
- 1 small shallot, sliced
- ¼ tsp crushed chilli flakes
- 1 pack Jack’s blueberries (150g)
- 2 tsp maple syrup
- 1 tbsp balsamic vinegar
- Sea salt and freshly ground black pepper
- 2 packs burrata, drained
- 1 small handful basil leaves
- ½ lemon, zested
- 1 tbsp Jack’s roasted salted cashews
Method
- Heat a frying pan until hot.
- Add the oil, shallot and chilli flakes and cook for 2-3 minutes.
- Add the blueberries, maple syrup and balsamic vinegar and cook for 2-3 minutes, stirring occasionally.
- Season with salt and black pepper.
- Tear the burrata in half onto a plate.
- Top with the blueberries, basil, lemon zest and cashews and serve.
