Meatball Skewers

Ingredients

  • 1 pack 12 beef meatballs
  • 1 onion, half cut into wedges, half finely chopped
  • 200g cherry tomatoes, halved
  • 1 x 340g can sweetcorn, drained
  • 2 tbsp extra virgin olive oil
  • 1 orange, juiced
  • 1 pack basil, leaves picked and torn
  • Sea salt and freshly ground black pepper

Method

  1. Slide the meatballs and onion wedges onto soaked wooden skewers or metal skewers.
  2. Cook meatballs according to pack instructions or on a BBQ.
  3. Tip the tomatoes, onion, sweetcorn, orange juice, oil and basil into a bowl.
  4. Season with salt and black pepper and toss together.
  5. Serve the meatballs on top of the salsa.
