Lunch/Dinner Baked Feta Pasta

Ingredients
- 500g cherry tomatoes
- 1 small onion, roughly chopped
- 1 pepper, seeded and roughly chopped
- 200g feta
- ½ tsp dried mixed herbs, thyme or oregano
- Sea salt and black pepper
- 4 tbsp extra virgin olive oil
- 300g pasta of your choice

Preheat the oven to 200°C, fan 180°C, gas mark 6.

Tip the tomatoes, onion and red pepper into a medium ovenproof dish and toss to combine. Settle the feta into the middle of the dish.

Scatter the dried herbs over the dish and season with salt and black pepper. Drizzle the oil over the top then place into the oven for 25-30 minutes until the feta is golden brown and the tomatoes bursting.

Meanwhile, when there’s 15 minutes left to go on the feta, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Drain and place the colander back over the pan to collect some cooking water.

Stir the tomatoes and feta together until combined into a chunky sauce then add the drained pasta. (If you like you can blitz the sauce to a puree at this point.)

Add a little of the cooking water and stir until the pasta is coated in the sauce, adding more pasta water if necessary. Season with a little more black pepper if needed then serve straightaway.
