Baileys Brioche Pudding

Ingredients

  • 2 medium eggs 
  • 60ml maple syrup
  • 225ml double cream 
  • 150ml Baileys 
  • 3 brioche burger buns, cut in half or 200g leftover panettone, bread 
  • 80g dark chocolate, roughly chopped
  • 1 tbsp icing sugar

Method

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4.
  2. Crack the eggs into a bowl.
  3. Add the maple syrup, cream and Baileys and whisk until smooth.
  4. Butter a medium ovenproof tin.
  5. Lay enough brioche into the tin to cover the base.
  6. Pour a little Baileys mix over the top to just cover.
  7. Scatter with a little chocolate.
  8. Layer the remaining brioche over the top.
  9. Pour over the last of the Baileys mix and chocolate.
  10. Press the Brioche down gently into the mixture.
  11. Leave to soak for 10 minutes.
  12. Place into an ovenproof dish, a quarter full of water and cover with foil.
  13. Bake in the oven for 25 minutes then remove the foil and cook for 5-10 minutes until golden brown.
  14. Serve warm dusted with icing sugar.
