Starters/Snacks Desserts Baileys Brioche Pudding

Ingredients
- 2 medium eggs
- 60ml maple syrup
- 225ml double cream
- 150ml Baileys
- 3 brioche burger buns, cut in half or 200g leftover panettone, bread
- 80g dark chocolate, roughly chopped
- 1 tbsp icing sugar
Method
- Preheat the oven to 180°C, fan 160°C, gas mark 4.
- Crack the eggs into a bowl.
- Add the maple syrup, cream and Baileys and whisk until smooth.
- Butter a medium ovenproof tin.
- Lay enough brioche into the tin to cover the base.
- Pour a little Baileys mix over the top to just cover.
- Scatter with a little chocolate.
- Layer the remaining brioche over the top.
- Pour over the last of the Baileys mix and chocolate.
- Press the Brioche down gently into the mixture.
- Leave to soak for 10 minutes.
- Place into an ovenproof dish, a quarter full of water and cover with foil.
- Bake in the oven for 25 minutes then remove the foil and cook for 5-10 minutes until golden brown.
- Serve warm dusted with icing sugar.
