Side Dishes Starters/Snacks Lunch/Dinner Bacon Pancakes

Ingredients
- 1 pack Jack’s smoked streaky bacon
- 150g plain flour
- 1 tsp baking powder
- Sea salt and freshly ground black pepper
- 1 egg
- 175ml semi skimmed milk
- Handful blueberries
- Maple syrup, to serve
Method
- Heat a frying pan until hot. Add the bacon and cook on each side until golden brown and crispy.
- Drain onto kitchen paper.
- Tip flour, baking powder, salt and pepper into bowl and mix together.
- Add egg and milk.
- Whisk together to a thick smooth batter.
- Heat a non stick frying pan until medium hot.
- Dunk the bacon in the batter.
- Add enough oil to just coat the pan and the batter coated bacon.
- Fry over a medium heat for 1-2 minutes until just golden and set.
- Flip over and cook for another 1-2 minutes until set.
- Repeat with the remaining batter and bacon.
- Serve drizzled with blueberries and maple syrup.
