Bacon Pancakes

Ingredients

  • 1 pack Jack’s smoked streaky bacon
  • 150g plain flour
  • 1 tsp baking powder
  • Sea salt and freshly ground black pepper
  • 1 egg
  • 175ml semi skimmed milk
  • Handful blueberries
  • Maple syrup, to serve

Method

  1. Heat a frying pan until hot. Add the bacon and cook on each side until golden brown and crispy.
  2. Drain onto kitchen paper.
  3. Tip flour, baking powder, salt and pepper into bowl and mix together.
  4. Add egg and milk.
  5. Whisk together to a thick smooth batter.
  6. Heat a non stick frying pan until medium hot. 
  7. Dunk the bacon in the batter.
  8. Add enough oil to just coat the pan and the batter coated bacon.
  9. Fry over a medium heat for 1-2 minutes until just golden and set.
  10. Flip over and cook for another 1-2 minutes until set.
  11. Repeat with the remaining batter and bacon.
  12. Serve drizzled with blueberries and maple syrup.
