Aubergine Chips

Ingredients

  • 2 tbsp olive oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp chilli powder
  • Sea salt and freshly ground black pepper
  • 2 tbsp honey
  • 2 tbsp sesame seeds
  • 1 medium aubergine, cut into 1.5cm batons
  • 1 pot Jack’s sour cream and chive dip

Method

  1. Pour the olive oil onto a plate.
  2. Add the coriander, cumin, chilli, salt, black pepper and honey and stir.
  3. Add the aubergine and toss to coat.
  4. Scatter with sesame seeds and toss again. 
  5. Tip into the air fryer and cook at 200°C for 15-20 minutes, shaking occasionally, Shake occasionally until tender and crispy.
  6. Serve with sour cream dip.
