Starters/Snacks Lunch/Dinner Aubergine Chips

Ingredients
- 2 tbsp olive oil
- 1 tsp ground coriander
- 1 tsp ground cumin
- ½ tsp chilli powder
- Sea salt and freshly ground black pepper
- 2 tbsp honey
- 2 tbsp sesame seeds
- 1 medium aubergine, cut into 1.5cm batons
- 1 pot Jack’s sour cream and chive dip
Method
- Pour the olive oil onto a plate.
- Add the coriander, cumin, chilli, salt, black pepper and honey and stir.
- Add the aubergine and toss to coat.
- Scatter with sesame seeds and toss again.
- Tip into the air fryer and cook at 200°C for 15-20 minutes, shaking occasionally, Shake occasionally until tender and crispy.
- Serve with sour cream dip.
