Airfryer Chicken Salad

Ingredients

  • 1 red pepper, cut into chunks
  • 100g bag fine beans
  • 1 small sweet potato, cut into chunks
  • 1 head little gem, quartered
  • 1 pack Jack’s mini chicken fillets
  • 1 tbsp olive oil
  • Sea salt and black pepper
  • ½ small bag rocket
  • 3 tbsp salad dressing of choice…

Method

  1. Tip the pepper, green beans and sweet potato into an air fryer.
  2. Drizzle with oil, salt and pepper and toss to combined.
  3. Add the chicken and drizzle with a little more oil.
  4. Place in the air fryer and cook at 190° for 15 minutes, until the chicken is nearly cooked through and the vegetables tender.
  5. Add the little gem and cook for another 5 minutes.
  6. Toss with the rocket and salad dressing and serve straightaway.
