Ingredients
- 1 red pepper, cut into chunks
- 100g bag fine beans
- 1 small sweet potato, cut into chunks
- 1 head little gem, quartered
- 1 pack Jack’s mini chicken fillets
- 1 tbsp olive oil
- Sea salt and black pepper
- ½ small bag rocket
- 3 tbsp salad dressing of choice…
Method
- Tip the pepper, green beans and sweet potato into an air fryer.
- Drizzle with oil, salt and pepper and toss to combined.
- Add the chicken and drizzle with a little more oil.
- Place in the air fryer and cook at 190° for 15 minutes, until the chicken is nearly cooked through and the vegetables tender.
- Add the little gem and cook for another 5 minutes.
- Toss with the rocket and salad dressing and serve straightaway.
