Apple Pancakes

Ingredients

  • 150g plain flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 egg
  • 175ml semi skimmed milk
  • 4 apples, cut into 5mm rings
  • 2 tbsp vegetable oil
  • 150g mixed berries 
  • 2 tbsp honey

Method

  1. Tip flour, baking powder and cinnamon into bowl and mix together.
  2. Add egg and milk.
  3. Whisk together to a thick smooth batter.
  4. Heat a non stick frying pan until medium hot. 
  5. Dunk apples in the batter.
  6. Add enough oil to just coat the pan and the batter coated apples.
  7. Fry over a medium heat for 1-2 minutes until just golden and set.
  8. Flip over and cook for another 1-2 minutes until set.
  9. Repeat with the remaining batter and apples.
  10. Serve with the berries and a drizzle of honey.
